These recipes were commissioned by the World Cancer Research Fund. They have a fantastic bank of recipes. I was asked to create 10 new recipes which did not use meat or fish, and half of them had to be fully vegan. They also needed to include a portion of fruit or veg in every portion, stick to a number of restrictions, be low cost AND be different from what they had on their website already.

- Lemon and pea couscous – a quick and easy lunch – suitable for adults and children and easy to make and transport
- Potato and vegetable samosas – a lower fat and higher fibre version of a samosa, packed with flavour and suitable for a packed lunch
- Green lentil flatbread and raita – wanting a snack with more fibre, check these out. You can change the dip to make this recipe a vegan one too.
- Overnight mixed bean salad with orzo – Another quick and easy packed lunch to help you when you are bored of your other salads!
- Cheese and broccoli squares – these are great for breakfast, lunch or snacks. Think savoury muffin but with more protein and veg!
- Scrambled tofu with wholemeal toast – a vegan alternative to scrambled egg.
- Baked vegan cheesecake – the dinner party recipe amongst these, suitable for vegans but, in the taste testing, loved by non vegans too. This cheesecake has a couple of surprise ingredients to add to your fibre intake. You’ll be wanting this for breakfast after your dinner party – we did!
- Sweet potato chocolate muffins – a great dessert option that’s also low in fat and lower in sugar than standard muffins. It was a hit with the children in the taste tests.
- No-cook nut balls – a bit bored of eating nuts plain, try this recipe. A lower sugar alternative to a chocolate truffle.
- Chocolate apricot bites – a lower sugar version of a rice krispie cake which has an unusual twist.
