We have been round the world in our greengrocers tour already and there are plenty more vegetables to try. This one is common place in Chinese cooking but has become very popular in the UK. It takes just 2 minutes to steam or stir fry so excellent for busy people.

Pak choi

Pak choi is part of the cabbage family but is closer to lettuce in taste than cabbage. It is a very good source of vitamins A and C, a good source of fibre and also supplies some calcium too (although you would have to eat a lot to use it to replace milk!).

Today’s recipe is another of mine and excellent for busy people. As a bonus it is also vegetarian and FODMAP friendly. If you are not on a FODMAP diet, you might like to add some spring onions too. Enjoy!
