As people prepare for Christmas, spare a thought for those who won’t have the option of choice this Christmas. With many people using food banks tinned vegetables become an essential part of their diet bring much needed fibre, vitamins and minerals. Today’s vegetable is one which survives well in the canning process and its crisp texture is largely maintained. It can be eaten hot or cold straight from the can.

Sweetcorn!

This vegetable is high in fibre and adds a beautiful colour to your plate. It also contains protein, vitamin A and other vitamins and minerals. 3 heaped tablespoons of sweetcorn count as one of your 5 a day.

Why not try it in soups, chowders, pasta sauces or salads? Today’s recipe idea is simply cook 200g spaghetti, drain and return to the pan, add 1 can drained tuna, 2 tablespoons tomato puree and a small tin of sweetcorn and heat through. This is a very quick meal and one which my kids love. It’s one of their 5 a day AND gives them some fish too.
