We have had some seasonal vegetables and others which we are fortunate enough to have in our shops all year round thanks to global trade. This vegetable became very expensive due to poor harvests earlier in 2017 and was hard to come by. This vegetable has been made even more popular thanks to pre prepared spiralised vegetables too. It’s courgette!

These vegetables have loads of water in them and some people hate them because they go mushy. You don’t have to cook them for long. They are great in stir fries, ratatouille, pasta sauces and even in muffins – see today’s recipe. This recipe is great for kids to get involved with cooking too. The recipe is a Food a Fact of Life recipe.
