The 2nd day of advent brings another delicious vegetable. This one more in season than the previous one. This one is great in stews and soups and winter warmers, perfect for this cold weather we are having.

Did you guess? It’s butternut squash.

Butternut squash is a great source of vitamin A. Vitamin A is needed for a healthy immune system, vision in dim light and to help keep skin and the lining of your nose healthy.

Today’s recipe is a hearty soup – suitable for vegetarians and vegans, and everyone else! My boys love this soup. Today’s recipe is brought to you by the World Cancer Research Fund – an amazing charity doing vital work.
